Shutdown and Start-Up Tips

Whether you need to close your kitchen for a short or long period, each equipment needs to be cleaned and shut down properly. Don’t just let your equipment be idle. By powering each unit down, you can conserve energy and save on unnecessary costs.

We have outlined top tips to help you with properly shutting down and be ready to reopen again. For more tips to properly shut down other Welbilt equipment, please review your operation manual; visit your brand website; review the Welbilt YouTube channel; or contact KitchenCare customer service for instructions.
 

Ice machines

For shutting down and restarting an ice machine, follow the key steps below:

Shutdown procedures
  • Remove the ice from the bin
  • Remove internal parts for de-scaling and sanitizing
  • De-scale and sanitize components
  • When the sanitation cycle has ended turn off water supply, disconnect the drain and incoming water line and empty the water trough.
  • Disconnect from electrical power
Start-up procedures
  • Reconnect the inlet and outlet water lines
  • Turn water back on - check there are no leaks!
  • Plug the machine in 
  • Open the door and press the clean button, when prompted " Make ice after cycle complete", add Sanitizer solution when prompted 
  • Close Door and tighten. Ice machine will automatically go to the ice making mode.

Combi ovens

For combi ovens, make sure you do the following for shutting down and restart:

Shutdown procedures

  • Complete a weekly or deep clean cycle
  • Switch unit off
  • Clean air baffels, suction panel, door gasket and door glass manually
  • Leave the unit door ajar to allow the cooking chamber to dry
  • Close water supply lines  

Start-up procedures

  • Open water supply lines
  • Check manually if cleaning rotor can be turned
  • Switch unit on
  • Complete a weekly or deep clean cycle
  • Unit is ready for operation

Grills and griddles

For hot-side equipment like grills and griddles, follow the general procedures below:

Shutdown procedures

  • Complete a clean cycle
  • On completion of the clean cycle ensuring the grill plate is cool, apply a thin layer of clean vegetable oil evenly over the grill plate - this will help to prevent potential rust
  • Do not reinstall Teflon's, wash as normal and store in suitable location
  • Lower the platens 
  • Switch off the equipment

Start-up procedures

  • Clean oil from grill plate
  • Ensure grill is clean and ready for use
  • Reinstall Teflon's
  • Commence Pre-Heat as normal

Please ensure that only software which is suitable for the unit series is installed on your Convotherm unit. This software cannot be used for other unit types from the range. If this is disregarded, no liability will be assumed for malfunctions.
